Pan Fried Zucchini

Do you need an easy veggie side dish that is made with only a few ingredients and is kid approved?  Grab yourself some zucchini from the farmers market and give this a try!

I had seen this method of cooking zucchini all over social media.  Zucchini is a vegetable that my daughter will eat, so I decided to give this a try and it did not disappoint. It is so good and so easy!

Pan Fried Zucchini

Easy veggie side dish with only three ingredients! This recipe begins on the stove and moves to the oven to finish cooking.

Equipment

  • 1 cast iron skillet or non-stick pan

Ingredients
  

  • 2 medium zucchini
  • 1 tbsp cooking oil
  • salt

Instructions
 

  • Slice the zucchini in half lengthwise, and cut slits across the flesh in a crosshatch pattern. Sprinkle the zucchini with salt, and allow to sit for 10 minutes to draw out the moisture. After 10 minutes, blot the moisture from the zucchini with a paper towel (no need to rinse).
  • Preheat oven to 400℉. (While oven is preheating, begin to cook the zucchini).
  • Over medium high heat, add one tablespoon of cooking oil to a cast iron skillet. When oil starts to ripple, place the zucchini flesh side down in the skillet, and cook for approximately 5 minutes or until brown.
  • Flip the zucchini over, turn off the stove, and place the skillet in the oven for 10 minutes for the zucchini to finish cooking and become tender.
