Craving a breakfast burrito? This sausage, egg, and spinach scramble rolled in a whole wheat wrap with cheese will hit the spot!

Equipment

  • 1 non-stick skillet or cast iron pan

Ingredients
  

  • 1 lavash wrap or tortilla
  • 2 eggs
  • 3 chicken sausage breakfast links, chopped (use bacon or ham instead)
  • ½ cup spinach
  • 1 oz cheese
  • 1 tsp butter or ghee

Instructions
 

  • In a pan, add cooking spray and saute the chicken sausage until brown. Add the spinach and stir until wilted.
  • In a bowl, scramble the eggs. Add one teaspoon of ghee to the pan with the sausage and spinach, and add the eggs. Cook until eggs are done.
  • Heat up the wrap or tortilla (I like to do mine over a very low flame over the burner on the stove). Add the cheese and egg mixture and roll up.
  • Hash browns or sweet potatoes with avocado and hot sauce would also be delicious! Make it your own and enjoy!
