- 1 non-stick skillet or cast iron pan
Ingredients
- 1 lavash wrap or tortilla
- 2 eggs
- 3 chicken sausage breakfast links, chopped (use bacon or ham instead)
- ½ cup spinach
- 1 oz cheese
- 1 tsp butter or ghee
Instructions
- In a pan, add cooking spray and saute the chicken sausage until brown. Add the spinach and stir until wilted.
- In a bowl, scramble the eggs. Add one teaspoon of ghee to the pan with the sausage and spinach, and add the eggs. Cook until eggs are done.
- Heat up the wrap or tortilla (I like to do mine over a very low flame over the burner on the stove). Add the cheese and egg mixture and roll up.
- Hash browns or sweet potatoes with avocado and hot sauce would also be delicious! Make it your own and enjoy!
