Years ago, I came across a banana bread recipe in cooking magazine that I tweaked and made healthier. I made it so often with bananas that had gotten too ripe that my daughter got tired of it, and no longer eats banana bread LOL! I still make this bread often to share with my family though.
This is basically a “dump and stir” recipe. You just need one bowl, a whisk (a fork works too!), dump the ingredients, stir together, and in about an hour your house will smell amazing and you will have delicious and healthy banana bread.
Enjoy it on it’s own with a cup of coffee, slather it with butter and honey, or my personal favorite, peanut butter! Have a slice alongside greek yogurt or cottage cheese. The addition of protein will balance your blood sugar and make it a balanced meal or snack. I’ve even enjoyed a slice before my workout because the carbs provide energy.
Healthier Banana Bread

Ingredients
- 3 ripe bananas
- 2 eggs
- ½ cup sugar
- ⅓ cup coconut oil, melted
- 1 tsp vanilla extract
- 1½ cups flour
- 1 tsp baking soda
- 1 tsp baking powder
- 1 tbsp cinnamon
- ¼ tsp salt
- ½ cup chocolate chips (optional)
- ½ cup walnuts (optional)
Instructions
- Preheat the oven to 350℉.
- In a bowl, add bananas, eggs, coconut oil, and sugar. Mix until well combined.
- In the same bowl, add flour, baking soda, baking powder, salt, and cinnamon.Fold dry ingredients into the wet until just combined and no dry ingredients remain. Do not overmix.Fold in chocolate chips and walnuts, if using.
- Butter, spray, or line a 9×5 loaf pan with parchment paper. Add the batter, and sprinkle more chocolate chips on top for good measure. Bake for 45-50 minutes or until a knife inserted in the middle comes out clean. If it starts to brown too quickly, cover with a piece of foil
- Cool on a wire rack. Remove from the pan, slice and enjoy!
