- 3 ripe bananas
- 2 eggs
- ½ cup sugar
- ⅓ cup coconut oil, melted
- 1 tsp vanilla extract
- 1½ cups flour
- 1 tsp baking soda
- 1 tsp baking powder
- 1 tbsp cinnamon
- ¼ tsp salt
- ½ cup chocolate chips (optional)
- ½ cup walnuts (optional)
Preheat the oven to 350℉.
In a bowl, add bananas, eggs, coconut oil, and sugar. Mix until well combined.
In the same bowl, add flour, baking soda, baking powder, salt, and cinnamon.Fold dry ingredients into the wet until just combined and no dry ingredients remain. Do not overmix.Fold in chocolate chips and walnuts, if using. Butter, spray, or line a 9x5 loaf pan with parchment paper. Add the batter, and sprinkle more chocolate chips on top for good measure. Bake for 45-50 minutes or until a knife inserted in the middle comes out clean. If it starts to brown too quickly, cover with a piece of foil Cool on a wire rack. Remove from the pan, slice and enjoy!
