Easy Egg Bake

 

This egg bake is protein rich and great to prep ahead for an easy make ahead breakfast to start your day.  Beginning your day with protein, provides satiety, balances blood sugar, and prevents overeating the rest of the day.  Pair a slice or two with oatmeal and fruit, or toast and avocado, and you’ve got yourself a balanced and satisfying breakfast.

Equipment

  • 1 9×13 oven safe pan
  • 1 bowl

Ingredients
  

  • 8 eggs
  • 8 slices ham, chopped (bacon or sausage can also be used)
  • 1 bell pepper, sliced
  • 1 zucchini, chopped
  • 1 cup spinach (any green can be used)
  • ½ cup cheese (optional)
  • ½ tsp salt

Instructions
 

  • Preheat your oven to 350℉.
  • Spray your 9×13 dish with non-stick spray.
  • Add your veggies to the dish in an even layer, and add your ham on top.
  • In a separate bowl, whisk the eggs and pour over the veggies and ham in the dish. Add the cheese, if using, and sprinkle with salt.
  • Bake for 30-35 minutes or until eggs in the middle are set and no longer jiggly.
  • Remove and cool for 5 minutes. Slice into 8 squares. Store in a glass container and place in the fridge.
