This egg bake is rich in protein and great for a make ahead breakfast to start your day.

1 9x13 oven safe pan
1 bowl
- 8 eggs
- 8 slices ham, chopped (bacon or sausage can also be used)
- 1 bell pepper, sliced
- 1 zucchini, chopped
- 1 cup spinach (any green can be used)
- ½ cup cheese (optional)
- ½ tsp salt
Preheat your oven to 350℉.
Spray your 9x13 dish with non-stick spray.
Add your veggies to the dish in an even layer, and add your ham on top.
In a separate bowl, whisk the eggs and pour over the veggies and ham in the dish. Add the cheese, if using, and sprinkle with salt.
Bake for 30-35 minutes or until eggs in the middle are set and no longer jiggly.
Remove and cool for 5 minutes. Slice into 8 squares. Store in a glass container and place in the fridge.
