Baked Chicken Thighs

Simple chicken dish made with pico de gallo and citrus that is ready in 30 minutes.

- 4 boneless chicken thighs or breasts
- 1 lemon, orange, or grapefruit
- 1 cup pico de gallo salsa
- salt or all-purpose seasoning
- 1 tbsp cooking oil
Preheat oven to 400℉.
Heat cast iron skillet over medium high heat. Season chicken on both sides with salt or your favorite all purpose seasoning. Add oil to the skillet.
Place chicken in the skillet and cook on one side until it has a good sear. Flip and evenly add the salsa over each piece of chicken.Transfer the skillet to the oven where it will finish cooking for 20-30 minutes or until chicken reaches an internal temperature of 165°. When finished cooking, remove from the oven and add the juice of a lemon, orange, or grapefruit. Allow to rest for 5 minutes before serving.
Any type of salsa works in this recipe. I just happened to have leftover pico.
Chicken and lemon is such a classic combo, but any type of citrus works. I'm using grapefruit. Trust me on this!
