Chocolate Brownie Bites

- 10 dates, pit removed
- 1 cup walnuts sub almonds
- ¼ cup cacao powder
- 1 dark chocolate bar, 70% or greater (optional) may also use ½ cup of dark chocolate chips
Place the dates in a bowl and pour boiling water to cover the dates. Soak for 10 minutes to soften. This makes the dates easier to process. Once soft, add the dates to the food processor along with the walnuts and the cacao powder. Close the lid and process until the mixture sticks together and forms a big ball. You may need to stop and wipe down the sides of the processor a few times.
Using a small cookie scoop, form into 10-12 balls. Serve as is, or dip in melted chocolate (see next step).
In a microwave safe bowl, melt the dark chocolate bar (chocolate chips work too). Dip each ball, one at a time, in the melted chocolate. I use a fork for this. It makes it easier for the excess chocolate to drip between the tines of the fork. Place each ball on a plate lined with wax paper. The wax paper makes it easy to remove the balls once the chocolate has dried. Place the chocolate covered balls in the refrigerator until chocolate has set. Store in an airtight container in the fridge for about one week.
You may substitute almonds for walnuts in this recipe.
You may sub out the dates and use dried figs instead.
Dipping in chocolate is optional, but makes for a more decadent bite.
If you like a sweet and salty fix, sprinkle with sea salt after you have dipped in chocolate.
